Juicy Lucy Burgers with Fresh Grilled Corn Salad:

Ingredients for the burgers:

  • 10 for 10$ burger patties
  • Salt and pepper to taste
  • 10 slices favorite cheese
  • BBQ sauce to taste
  • 8 oz. sliced mushrooms
  • ½ onion, sliced
  • Cooking oil as needed
  • Sliced tomatoes and lettuce if desired
  • 5 burger buns
  • Favorite chips for serving

  • Ingredients for the salad:

  • 4 ears corn, shucked
  • ½ red onion, thinly sliced
  • 3 tbsp. cider vinegar
  • 3 tbsp. olive oil
  • ½ tsp. kosher salt
  • ½ tsp. pepper
  • ½ c. sliced fresh basil

  • Directions

    1. Preheat your grill to medium high. Drizzle a little oil on the corn and then place them on the grill to lightly char at about 2 minutes per side. Once charred remove them from the grill and set aside to cool.
    2. Cut the corn off the cobs then add them to a bowl with the red onion, cider vinegar, olive oil, salt, pepper, and basil. Taste and add additional seasonings as needed. Set aside.
    3. Make the burger patties by taking 1 patty and season it with salt and pepper. Use your hand to flatten it a bit cut 2 slices of cheese into ¼ ‘s and then place them in the center of the patty. Drizzle on a bit of bbq sauce as much as you like. Take a 2nd patty and season it then flatten it a bit. Place it over the cheese to enclose it forming a single patty. Repeat this process with the remaining patties and cheese to form 5 juicy lucy burger patties.
    4. Oil the grill as needed and place on patties. Cook them 4-5 minutes on the first side, then flip and cook another 4-5 minutes on the second side.
    5. As the patties cook, add the sliced mushrooms and onions to the grill, if using a flat top. If not, place them in a saute pan with some cooking oil over medium-high heat. Cook them until they start to brown 4-5 minutes. Season them with some salt and pepper then cook them until they reach your desired doneness.
    6. Toast the buns and then when the burgers are done add a patty, add some of the caramelized mushrooms and onions. Add a bit more bbq sauce if you like, then top it off with the top bun. Serve the burgers warm with some of the corn salad and a pile of chips. Enjoy!
