Last weekend I took a trip south to Torrey, Utah, where I met in person the good folks at Etta Place Cider, did some muddy hiking in Capitol Reef National Park, drove the famous (and terrifying) Hogback in Grand Staircase-Escalante National Monument and — most importantly — ate a lot of delicious food.

Before we got to Torrey, we stopped for lunch in rural Bicknell, along State Route 24 in Wayne County, at the original Curry Pizza.

Before Bhinda Singh founded Curry Pizza in Bicknell in 2017, the business was another pizza place. Singh stopped there to get a drink when he was traveling through town in his motorhome, and received poor service, he said. Seeing that the restaurant was for sale, he decided to buy the place, and opened it without knowing how to make pizza, he said.

But he had Indian restaurants in Provo and South Jordan at the time, he said, and a friend suggested that Singh just “marry” pizza and Indian food. So he went on a cross-country odyssey to study curry pizza, trying the food in 36 states until he figured out how he wanted to make it.

Now Singh owns five locations of Curry Pizza, plus India Palace in Provo. The Bicknell location — which has the episode of Food Network’s “Diners, Drive-Ins and Dives” that features Curry Pizza playing constantly on one of the TVs — is still serving tasty pizza to hungry travelers.

We dug into the butter chicken pizza (more on that below). If you’re driving through Bicknell, make sure you stop at Curry Pizza.

If you’ve ever wished you didn’t have to go all the way to Star Wars: Galaxy’s Edge in Disney parks to get Star Wars’ famous blue milk, you’re in luck. Just in time for May the 4th, TruMoo, in collaboration with Lucasfilm, has put half-gallons of blue milk on dairy department shelves at such retailers as Walmart, Target, WinCo and more, according to a news release. The blue beverage, which was first introduced in the movie “Star Wars: A New Hope,” is low in fat and vanilla-flavored.

Openings:

Blind Rabbit Kitchen, at 1080 E. 2100 South, Salt Lake City. This restaurant, located in the old Pizza Volta space in Sugar House, is scheduled to open today. According to its Instagram, Blind Rabbit Kitchen will specialize in steak and cocktails.

Crossroads Bar & Grill, at 5592 S. Redwood Road, Taylorsville. This sports bar in The Crossroads of Taylorsville shopping center celebrated its grand opening on April 10, according to a news release from Taylorsville City. It serves staples like wings, burgers, pizza and, of course, beer.

Wonder Tea & Sweet, at 13 W. Center St., Logan. This tea room celebrated its grand opening on April 10, according to its Facebook page. It sells boba tea, boba smoothies, egg tarts, Hong Kong-style egg waffles and more.

Dish of the Week

The butter chicken pizza from Curry Pizza was cheesy and saucy, with bursts of flavor from the Indian spices and a crust that was crispy yet chewy, and perfectly blistered. Made with chicken tikka, mozzarella, onions, roasted garlic, ginger and cilantro on makhani curry, this pizza came with the cheese on top of the toppings — an ode to the days when owner Bindha Singh said he didn’t know how to make pizza.

The crust, which Singh calls “naan/pizza crust,” is unique because the flour it’s made with is low in gluten, he said. Since the dough doesn’t have to rise, like regular pizza dough, Curry Pizza can make its pizza fresh every day, Singh said, with a selection of 22 sauces made in-house.

This pizza was tasty and satisfying, and filled our bellies on our journey.
